Look Familiar?

(please forgive the horrible photo quality... it's 9pm and there is no natural light and my kitchen lighting stinks.)

Here's tomorrow's lunch:
Look familiar? Very similar to yesterday...
Ayleen's wrap with chicken and sharp cheddar cheese, sharp cheddar cheese stick, pepper jack tortilla chips (no need for salsa, they are just spicy enough), homemade puppy chow, banana, juice.

The slight difference is my lunch is the contents of my wrap... I made some delicious crock pot chicken that is very versatile... use it in wraps, pasta, make chicken salad... it's great to have some in the fridge when needed! Here is my first attempt at sharing a recipe!


Delicious Crock Pot Chicken
2lbs boneless/skinless chicken breast (fresh or frozen) I used herb/garlic seasoned chicken breast from my grocery store's meat department
2/3 C. Lawry's Herb and Garlic Marinade
2/3 C. Zesty Italian Dressing
2 C. Chicken Broth

The night before, combine the chicken, H&G marinade and Italian dressing in your crock pot and refrigerate overnight. In the morning, add your 2 C. chicken broth (I used bullion cubes and hot water because I am an idiot and forgot to buy broth). Cook on low all day, or at least 4 hours on high.

That's it! You will know it's done when you can shred it easily with a fork. So good and so easy!

it's been a while



I've been putting off grocery shopping. I actually really enjoy grocery shopping, but I find I have a hard time staying in my budget sometimes, so it's easier if I just put it off. Today for lunch I had 2 horribly freezer burnt veggie chicken patties and some caramel corn... I knew it was time to make a trip to my favorite local grocery store. I love packing lunch the night after a grocery trip... so many options, such a delicious lunch for tomorrow :)

Ayleen's SoftWraps with turkey and sharp cheddar, a sharp cheddar cheese stick; tortilla chips with a hint of pepper jack; s'mores trail mix; a banana & juice. Yum.

The dreaded C word...

...conferences. (what did you think I was going to say?!?)

It's conferences week at my school, which means it's going to be a long week. We have to stay until 8pm Tuesday and Thursday even if your conferences are finished before then... fair's fair I guess, some people have more students than others. Honestly, I usually don't mind the conferences themselves. For the most part, I enjoy talking to the parents and usually have lots of great things to share. It's just the time and exhaustion that comes along with them. Sooo... I'll be at school from 7am-8pm tomorrow, meaning I plan to eat all 3 of my meals there. Ohh joy. At least I packet myself some goodies. Here they are:


Breakfast:
Raisin Bran, banana, skim milk.


Lunch:
Baked potato soup with cheddar cheese on top, saltines and wheat bread for dipping in the soup, cheese for the crackers, applesauce, juice.

Dinner:
Turkey and cheddar on wheat; saltines; corn. I found these single serve corn dishes in the freezer section... not entirely healthy (they are in a 'buttery sauce') but they are delish and its a way to add some veggies in my packed meals (can't eat raw.)

Short week this week!

No school this Friday... funny how the knowledge of just one less day makes even the beginning of the week better. Here's my lunch for tomorrow:
I forgot to buy bananas :( (the one fresh fruit I can eat) so I will make due with some applesauce (not pictured) Chex cereal (rice/corn mixed together), Allayne's wrap with turkey and cheese, fruit snacks, vanilla wafers with Nutella :)

That's a wrap!

I have a confession to make.

I ate hot lunch this week. Out of sheer lack of options to pack a lunch, I decided I'd just eat hot lunch. It was mini corn dogs. Confession #2: they were delicious. Do you ever eat something that you know is disgusting, yet that disgustingness just makes it all that much more delicious? Yeah it was like that. Unfortunately, not only was I hungry about 2 hours later, my stomach was queasy all afternoon.


Lesson learned, here's tomorrow's lunch:
Wrap: salami, pepperoni, pizza sauce and mozzarella in a delicious rosemary and olive oil wrap, Mott's fruit snacks, a banana, a few chips, juice, and a piece of a brownie. These brownies are made at a local grocery store, they are called Bad Boy Brownies, and they are to die for. So good, you only need about an inch square and its plenty.

Plain and Simple

I pack my lunch at night, because at 5:20am, when I wake up, I'm usually not functioning well enough to pack a cohesive lunch... but then again, who is at that time of the morning? Anyways, I just wasn't up to making a cutesy lunch, so I went for simple favorites:

Honey turkey breast and sharp cheddar cheese on whole wheat-white bread, simply fruit roll, cereal bar, cheese crackers, 2 cookies, a banana and a juice. Yum.

A Spring-y Lunch

Can you tell I'm desperate for spring? I dug through my mini cookie cutters tonight for spring type shapes... I've got fall, Halloween, tons of Christmas/winter ones... not so much on the spring, so here's what i could come up with:

Peanut butter and honey on whole wheat-white bread, flat bread crisp crackers with cheddar cheese spread, puffy popcorn, a couple of fudge stripe cookies, a banana, a juice, and some flower(ish) fruit leather cut outs for a little spring time feeling!

Spring is... almost here!

I live in Wisconsin. Spring likes to play tricks with us... 3 weeks ago it was 45 degrees, then the following week (which just so happened to be our spring break) we got dumped with 18 inches of snow. No joke. We're finally almost out from under that blanket of snow, it has been in the upper 30's to low 40's (which feels like a heat wave after a Wisconsin winter!) and... I think spring might actually be on it's way this time! So in honor of our hopefully soon spring, here is a nice spring-y lunch!

Tomorrow's lunch and after school snack.

Lunch:
Can you tell I've been into wraps lately?!? Honey turkey and sharp cheddar on a wrap, yogurt covered pretzels, a banana, 2 cookies, a few veggie chippers, fruitables juice and water to drink.

After school snack: natural applesauce, sea salt flat bread thins with cheddar cheese spread, 2 cookies, simply fruit roll... not pictured, my daily Diet Coke :)

Lunch.

Here is tomorrow's feast:
It is actually breakfast, lunch, and an after school snack, so I broke it down so that it doesn't look like quite so much food...


Breakfast:
Nutri-Grain cherry pomegranate cereal bar, natural applesauce, tropical orange fruitables fruit/veg juice.



Lunch:
la Tortilla wrap with the last of my delicious deli ham and sharp cheddar cheese, a simply fruit roll folded in half, some loose granola, a few pretzels, 2 Girl Scout cookies, a banana, some natural applesauce, and I guess I forgot to add in the juice.


After school snack:
I Clif Crunch granola bar, Mott's fruit snacks (made from fruit/veg juice!) a few pretzels, a Reese's pb cup and a diet Coke. The diet Coke and pb cup are my reward for making it through the day :)

Back to reality...

Spring break is over, and it's back to work tomorrow. Here's the lunch I've packed to get me through that grueling first day back :)

Turkey and sharp cheddar on a traditional SmartWrap (13g of fiber!), chocolate granola, banana, natural applesauce, pudding (which I will put the granola in), fruitables fruit/veg juice. Under the granola, there's also Mott's fruit medleys fruit snacks, which are made from real fruit/veg juice.

Lots of fruits



Tomorrow's meals/snacks feature lots of fruits. I already can't wait to eat! Haha.

Breakfast (in the middle): Mussleman's natural applesauce, Quaker reduced sugar/low fat granola bar, Mott's Medleys apple juice (tastes almost just like regular apples juice except a little more tart maybe.) I love the concept of fruit/vegetable juices since I don't eat a lot of whole veggies because of my stomach.

Lunch: I feel like I packed an awful lot for lunch, but I know I will eat it all. I've been hungry by about 2:00 lately, so I've been packing a little more in my lunches to hold myself over. Shaved turkey breast and shredded sharp cheddar cheese on a light-original FlatOut wrap (90 calories, 9 grams of fiber!), Apple Fruitabu, Mussleman's natural applesauce, banana, 3 pretzels, a few ranch crackers, 4 mini Reese's peanut butter cups, cherry pomegranate V8Splash to drink.

After school snack: More Mussleman's applesauce (can you tell I'm obsessed lately?!?) a banana, some ranch crackers and a few mini PB cups.


Wow... that's a lot. But it's 12 hours worth of food!

Back at it

I have been eating lunch, I swear. Blogging just isn't a high priority this time of year. Things at school are crazy busy and when I get home at night I either a) don't take the time to pack a pretty lunch for the next day or b) don't take the time to blog about it. I do have 4 lunches to share with you though!

This was from sometime before Valentine's day... don't know when exactly. Potato and cheddar perogies, packed in tin foil so that I could heat them in the toaster oven at school. There's also some Wheat Thins sticks, cheddar cheese spread, a chocolate cookie and some Valentine's gummies.

Here we have some blueberry pancakes, crackers, a fruit roll (Fruit Roll-Ups Simply Fruit), string cheese, a Hershey's chocolate, pineapple juice and a juice box.

Eew, this picture is super blurry, sorry about that. This lunch is a whole lot like the last one, except there's more there... I was still hungry after the last lunch. 2 blueberry pancakes, bacon, fruit leather, 2 two-bite brownies, pineapple juice and a juice box. I guess there's not all that much more, but I don't remember being hungry after this one.



And now, for tomorrow:
I decided to show all 3 meals I pack each day for school: breakfast, lunch and an after school snack. I'm at school from 6:45am-6:00pm every day, so if I don't pack a breakfast the night before, I end up skipping it, or eating something terribly unhealthy. I have also found that if I don't pack a snack for after school, I get home at 6 and I'm famished, so I eat everything in sight. This way I'm hungry but not starving, so I have the patience to actually cook something for dinner, rather than eating my weight in crackers or something like that.

Breakfast: Banana, granola bar, cherry pomegranate V8 Splash

Lunch: Natural applesauce, ham and sharp cheddar in a Flat-Out Light Italian wrap (yum!), some homemade garlic croutons, cherry fruit leather, 2 sugar cookies, stuffing (just need to add hot water from the water cooler at school... works out great!) and a juice. Plus I'll be drinking water at lunch, just like to bring a little juice box to add an extra serving of fruit to my lunch.

After school snack: Wheat Thins, cheddar cheese spread, natural applesauce. Not pictured: the daily Diet Coke I reward myself with for making it through the day :)

An Odd Combination...

Well, today's theme was... what on earth is in the freezer that I can throw together and call lunch?!? Can't say it was my favorite lunch ever, but it was good enough :)

4 frozen turkey meatballs, silver dollar pancakes, simply fruit roll, the heart container contains sugar-free syrup (which expired a few months ago... syrup doesn't really expire, does it?!?), string cheese whips and cheese crackers.

There were doughnuts in the teachers lounge... can't say no to temptation like that!

I'm Back!

School has been back in session for a week now, but with the craziness of back to school, I just wasn't up to making cute lunches. I wouldn't necessarily consider this one a cute one, but it's better than what I was packing last week :)

Tomorrow's lunch includes... stir fry chicken made just for me by my dad (it's my favorite,) 2 Dare maple cream cookies, white cheddar crackers, skim milk, juice, the last of my Christmas caramels, 2 simply fruit leathers.

Not the healthiest lunch, but it's all I had to work with.
